Japan
Hibiki 17 years is a blended Japanese whisky from Suntory, made in Japan. The name Hibiki means resonance, a fitting word for such a balanced pour. This was the first whisky in the Hibiki range, released back in 1989. The blend draws on whiskies from three Suntory distilleries. Malt comes from Yamazaki and Hakushu, while Chita supplies the grain whisky. Different cask types add further depth and texture. The result is harmony, which is exactly what the Hibiki name promises. The nose opens with soft floral aromas of lavender and eucalyptus. Beeswax adds a waxy, honeyed warmth underneath. Ripe plum and grape bring a fresh fruit lift. It feels gentle, fragrant and inviting from the start. On the palate this aged Japanese whisky stays smooth and refined. Honey sweetness leads the way, joined by malty depth. A light peppery spice keeps things lively. Fresh grape and soft floral notes weave through the middle. The finish is clean, with lingering honey and gentle warmth. The bottle is as memorable as the liquid inside. Its 24 facets represent the seasons of the old Japanese lunar calendar. That attention to detail runs through every part of Hibiki 17 years. Enjoy this blended whisky neat, in a simple glass. Give it time and the layers slowly reveal themselves. The honey and plum keep it soft and inviting. The gentle pepper and floral notes add quiet complexity. This is a sought-after, long-aged release for special occasions. Hibiki 17 years remains a benchmark for blended Japanese whisky.
