Hibiki 21 years is a blended Japanese whisky from the House of Suntory in Japan. Hibiki draws malt from Yamazaki and Hakushu and grain from Chita. Each spirit is aged at least twenty-one years before blending. The result is seductive, blossoming, and subtle, words Suntory uses for this flagship range. The Hibiki name means harmony in Japanese, and blending here is treated as craft rather than formula. The Chief Blender tastes over a hundred malt samples from Suntory's three distilleries to shape every composition. Yamazaki and Hakushu malts supply fruit and depth, while Chita grain whisky brings soft sweetness and balance. Suntory founded Hibiki to showcase how malt and grain can sing together without one voice dominating. Components spend two decades or more in cask before the Chief Blender considers them for this composition. Each bottle carries a label of Echizen Washi paper with calligraphy by Tansetsu Ogino. Its twenty-four facets represent micro-seasons across the Japanese calendar. Cooked fruit, blackberry, and ripe banana rise from the glass alongside caramel sweetness. Sandalwood, honey, dried fruit, and sherry warmth unfold on the palate, backed by vanilla, woody spice, and toffee. A hint of citrus brightens the mid-palate.
