Mortlach in Dufftown has used its unusual 2.81 distillation process since 1897. Spirit passes through six stills in a way that no other distillery replicates. That method produces a heavier, richer spirit than most Speyside expressions. Maturation begins in bourbon casks, which bring vanilla sweetness and gentle fruit. The whisky then moves into sherry butts for finishing, adding dried fruit, richness, and depth. That sherry influence gives Mortlach 15 years an extra layer of complexity that sets it apart. The result is a whisky that feels both powerful and polished. The bourbon cask foundation brings vanilla and gentle sweetness to the fore.
