Cask 900791 was filled in 2006 and then left alone for fifteen years. It was a first-fill sherry butt, so the wood still had plenty to give. Signatory bottled the result at 63.9%, straight from the cask, with no colouring added. The spirit came from Glenlivet in Speyside. Signatory Glenlivet 15 years is a single malt Scotch whisky from Speyside. Glenlivet distilled the spirit in 2006. Signatory filled it into a first-fill sherry butt and left it there for fifteen years. That cask carried the number 900791. It went into bottle at 63.9% alcohol, straight from the wood. No colouring was added. This is one cask on its own, not a blend of many. Glenlivet works in Speyside, a region in the north east of Scotland. Signatory bottles whisky rather than distilling it. The company buys casks from Scottish distilleries and releases them under its own labels. The Cask Strength Collection is the range for casks bottled at full strength, with no water added. Every release names its cask, so no two bottles in the series taste alike. Here the cask is butt 900791. The nose opens sweet, with honey and a lift of spice behind it. Give it a minute and the sherry butt makes itself known. Dried fruit fills the palate, raisins and sultanas above all. The strength pushes those flavours hard and holds them there. Wood spice runs underneath, dry rather than sugary. The finish stays fruity and warm for a long time. At 63.9% it is a big pour, best taken neat. Most Glenlivet on the shelf is bottled by the distillery, reduced to a set strength, and drawn from many casks. Signatory Glenlivet 15 years works the other way round.
