Facts

The number in this bottle's name is no marketing flourish. It points to the 500-litre Oloroso sherry butts that give the whisky its final character. The spirit first rests in first-fill ex-bourbon barrels. Then it moves into those big sherry casks for a finishing spell. The result is a deep, nutty brown colour and a sweet, spiced heart. Expect toffee apple on the nose, then a viscous mouthful of warm spice. Raisins and sultanas mingle with honey and a soft cinnamon glow. It closes on sweet dried fruit and a clean peppery kick. Pour it neat and let the sherry do the talking.

About the distillery

Distillery

TullIbardine

Tullibardine is a Highland whisky distillery located in Blackford, Perthshire, Scotland. It was founded in 1949 on the site of an old brewery that had been in operation since the 15th century. The distillery produces a range of single malt whiskies that are aged in a combination of ex-bourbon and ex-sherry casks. Their core range includes the Tullibardine Sovereign, a 500-milliliter bottling of their flagship single malt matured in first-fill ex-bourbon barrels, and the Tullibardine 225, which is aged in 225-liter red Burgundy wine casks from Chateau de Chassagne Montrachet. Tullibardine was one of the first distilleries in Scotland to install a bottling plant on site. This allows them to bottle their whisky on location, which helps to maintain quality control and ensures that the whisky is presented in the best possible condition.

About the TullIbardine 500 Sherry Finish

TullIbardine 500 Sherry Finish is a single malt Scotch whisky from the Highland village of Blackford. The TullIbardine distillery sits below the Ochil Hills, drawing on a spring famed for its purity. The name tells a story. This whisky is finished in 500-litre Oloroso sherry butts. And that figure is exactly where the bottle gets its title. Before the sherry stage, the spirit matures in first-fill ex-bourbon barrels. The two woods together build a rich, layered single malt. The bourbon casks lay down a base of soft fruit and vanilla. The sherry butts then pile dried fruit and spice on top. Those sherry casks leave their mark on both colour and taste. The whisky pours a deep, nutty brown. On the nose you meet toffee apple with a hint of oatmeal. The palate turns spicy, full of warm cinnamon, nutmeg and dried fruit. Raisins and sultanas arrive alongside honey and soft sherry sweetness. The finish is long, with sweet dried fruit and a clean peppery snap. Notes of chocolate and gentle oak round out the spice. Bottled at 43% ABV, TullIbardine 500 Sherry Finish drinks beautifully neat. The sherry influence gives it a festive, after-dinner feel. The distillery has worked in Blackford since 1949, a Highland name built on patient maturation. This sherry-finished single malt shows what TullIbardine does best. It is a warm, fruity dram for anyone who loves a good sherry cask. Pour it neat and let the spice and dried fruit unfold. A little time in the glass brings out its softer, sweeter side.
