Michel Couvreur Michel Couvreur Candid Malt is a single-malt whisky matured in Burgundy, France. Michel Couvreur sourced Scottish malt spirit, then raised it far from any distillery floor. The cellars sit underground at Bouze-lès-Beaune, in the heart of France. Michel Couvreur was a Belgian-born wine and spirits merchant with firm beliefs. He dug his own cellars into the Burgundy hillsides in the 1970s. He held that the cask shapes most of a whisky's final character. So he spent freely on rare sherry casks, including Pedro Ximénez and Palomino wood. Cool, damp cellars let the spirit mature at its own slow pace. That patience shows in the glass. Leather and pepper lead the way, warm and a little wild. Dried fruit follows, all raisins and dark sweetness. There is a ripe plum note threaded through the middle. Salted caramel rounds it off with a gentle sweetness. The oak runs deep here. Sherry-soaked wood gives the whisky its mahogany colour and grip. The finish stays long, dry and faintly spiced.
