Waterford Distillery is a modern Irish whiskey distillery located in Waterford, Ireland. The distillery was founded in 2015 by Mark Reynier, who is known for reviving the Bruichladdich distillery in Scotland. Waterford is unique in that it is focused on producing single malt Irish whiskey that showcases the terroir of the local barley used in the production process. Waterford sources barley from over 40 farms in the surrounding area, each with its own unique microclimate and soil type. The barley is then malted and distilled using traditional methods in copper pot stills. The resulting whiskies are aged in a variety of casks, including ex-bourbon, ex-sherry, and virgin oak casks, to create a range of flavor profiles. Waterford uses a combination of modern technology and traditional techniques to create their whiskies. They use a state-of-the-art distilling system that allows for precise control of the distillation process, while also using wooden washbacks and copper pot stills that are similar to those used in traditional Irish whiskey production.
