Tomatin sits high in the hills south of Inverness, drawing its water from the Allt na Frìthe. In the 1970s the place ran at 12.5 million litres a year, one of the largest malt distilleries anywhere. By 2007 output had dropped to a fifth of that. Smaller runs suit the spirit. Fifteen years in refill bourbon casks leaves the wood quiet and the fruit forward. Pear and citrus arrive first, then honey and cream across the palate. Almond and cereal close it out. It is a gentle Highland malt with more depth than its softness suggests.

Tomatin 15 years is a Highland single malt Scotch whisky from the Tomatin distillery near Inverness. It spends fifteen years in refill bourbon casks and is bottled at 46%. Refill wood gives up less colour and tannin than a first-fill barrel. That choice lets the distillery character lead instead of the oak. The result is a soft, fruity Highland malt with clear vanilla sweetness running through it. The distillery opened in 1897 and worked with just two stills until 1958. Expansion followed fast. By the 1970s it was making 12.5 million litres a year, among the biggest malt operations in the world. Twelve stills work there today. When the owners went into liquidation in 1986, the Japanese group Takara Shuzo stepped in. Water for the mash still comes from the Allt na Frìthe. Pour it and the nose opens on pear, banana and a lick of citrus. Caramel and floral notes sit behind them. The palate turns sweeter, with honey, cream and soft plum over a light oak frame. A little pepper and spice keeps it from going flat. The finish is dry and nutty, almond and cereal fading slowly. Nothing here shouts, and that restraint is the point. Refill bourbon is the quiet choice, and it defines this bottling. Tomatin 15 years carries no sherry finish and no cask switch late on. The spirit reaches the bottle much as the stills made it, only softer. Fifteen years is long enough for dried fruit and almond to appear, short enough to keep the fruit fresh. At 46% it has enough weight to carry the sweetness.
