Glendullan was built in 1897 as the seventh distillery in Dufftown, the whisky town of the Highlands. It takes its name from the Dullan, the river that runs nearby and once turned its mill wheel. The tall, onion-shaped stills here coax out a light, orchard-fresh spirit. Eighteen years in oak round it into something gentle and ripe. You get soft pear and banana, a little vanilla, and a floral lift over warm wood. It pours pale gold and drinks easy. Sip it neat and let the fruit and sweetness unfold slowly in the glass.
