Signatory bought a single refill sherry butt of Laphroaig and let it sit for fifteen years. What came out is loud. The sherry gives honey and butterscotch, the spirit gives salt, seaweed and iodine. Neither side gives ground. Underneath sits the smoke from Laphroaig's own malting floors, where barley still dries over peat. That smoke is oily and mineral, not woody. It spent fifteen years in a refill sherry butt. Signatory bottled it at 60.8%, with no colouring added. Refill casks give up less wood flavour than fresh ones. That leaves the distillery character in charge, which is the whole point of a bottling like this. Laphroaig was founded in 1815 on the south coast of Islay. It is one of the few Scottish distilleries that still runs malting floors and its own kiln. Workers turn the barley by hand, then dry it over peat smoke. In 1994 the distillery received a Royal Warrant, a mark of royal approval that very few whisky makers hold. That kiln is where the medicinal character starts.
