Midleton Very Rare Dair Ghaelach is a series of high-end Single Pot Still Irish whiskeys produced by Midleton Distillery in Cork. Each edition is finished in virgin Irish oak hogsheads crafted from trees chosen in specific Irish woodlands—including Grinsell’s Wood, Bluebell Forest, Knockrath Forest, Kylebeg Wood, and Kilranelagh Wood. Every bottle can be traced back to a single oak tree. The whiskey begins life as a vatting of Midleton pot still whiskeys aged in ex‑American oak for 15–22 years. After primary maturation, it is transferred into virgin Irish oak casks (created via quarter-sawed staves toasted in Spain) for a finish of around two years. Bottled at cask strength—typically between 55 % and 58 % ABV—it is non‑chill filtered and carries its natural colour. In the glass, the colour ranges from deep orange to rich caramel. On the nose, look for pronounced oak spice, cinnamon, nutmeg, vanilla, dried tropical fruit, orchard fruit, with underlying pot still earthiness and hints of coffee and honey. The palate delivers robust oak tannins and vibrant pot still spice, followed by stewed apple, caramel, dark chocolate, honeycomb, orange peel, tropical fruit, and vanilla. The finish is exceptionally long and warming—oak and spice linger, balanced by fruit sweetness and light tannic dryness. This expression suits drinkers who enjoy rich and spicy pot still character at full strength. The Irish oak finish brings bold spice and structure, while the underlying whiskey remains soft and creamy. It is best served neat or with a few drops of water to reveal hidden layers.
