Mars
High in Nagano Prefecture, in the Japanese Alps, Hombo Shuzo built the Mars Shinshu distillery in 1985. The company already had decades of experience making shochu and whisky elsewhere in Japan, but wanted a cooler climate for something lighter and more refined. Sitting roughly 800 meters above sea level, Mars Shinshu is Japan's highest whisky distillery. Crisp mountain air, heavy winter snow, and water filtered through granite shape a slow, gentle maturation. The result is a delicate style that stands apart from the smokier whiskies more common elsewhere. Production did not run continuously. The distillery was mothballed in 1992 during a downturn in Japanese whisky demand and stayed silent for nearly two decades before reopening in 2011. Its Komagatake single malt takes its name from the mountain that towers over the site.
