Kilchoman

Kilchoman is a distillery located on the Isle of Islay, off the west coast of Scotland. It was founded in 2005, making it one of the newest distilleries on the island. About the Kilchoman Sanaig

Kilchoman Sanaig is a single malt Scotch whisky from Islay, crafted at one of Scotland's most distinctive farm distilleries. Kilchoman grows barley, malts it, distils, and bottles entirely on site. A true grain-to-glass operation rare in modern whisky. The whisky takes its name from a rugged Atlantic inlet on Islay's western shore. Sanaig is matured in a combination of bourbon barrels and sherry casks. That vatting is deliberate. Bourbon casks bring butterscotch, custard, and a lighter citrus lift. Sherry casks add dark chocolate, cherry, date, and a deep caramel richness. The result sits somewhere between the two: full and mouth-coating, yet balanced. Each batch reflects careful selection across both cask types. At 46% ABV, Kilchoman Sanaig has enough weight to carry its flavours cleanly. The nose opens with brine and brown sugar. The palate builds through layers of cocoa, cream, and char before a warm bloom of black pepper and cinnamon arrives. Peat smoke runs throughout at 50 ppm, the Kilchoman house style, present but never overwhelming. A gentle buttery softness rounds out the mid-palate. Kilchoman is Islay's only single farm single malt, and that matters for this expression. The distillery's farm setting shapes everything from raw material to maturation climate. Sanaig reflects the Atlantic-facing character of the west coast: salt air. Dark fruit, and a long smoky finish with apple and apple-skin brightness underneath. The finish lingers with ash and a trace of dark chocolate. This is a whisky best enjoyed neat, at room temperature, allowing the layers to open gradually in the glass.
