In October 2017 Billy Walker bought this Speyside distillery from Pernod Ricard and immediately cut its output. Capacity fell from four million litres of alcohol to 500,000. Fermentation went up to 160 hours, which pushes the spirit towards fruit rather than cereal. You can taste that decision here. Raspberry and guava come first, then milk chocolate, walnut and a dusting of nutmeg. Sherry puncheons and Rioja barriques pile on fudge, coffee and sticky dried fruit. Orange zest keeps the whole thing from turning heavy. Only 4,500 cases of this batch were made, bottled at natural cask strength.

Glenallachie distillery is a single malt Scotch whisky distillery located in the Speyside region of Scotland. The distillery was founded in 1967 by Mackinlay McPherson Ltd, and it is currently owned by the Glenallachie Consortium, led by industry veteran Billy Walker. The distillery is situated in the heart of Speyside, near the town of Aberlour, and draws its water from the nearby springs of Ben Rinnes. Glenallachie produces a range of whiskies, including both unpeated and peated expressions, which are aged in a combination of oak casks, including ex-bourbon, sherry, and virgin oak casks.

Glenallachie 10 years Cask Strength Batch 5 is a Speyside single malt Scotch whisky. It arrives at 55.9% ABV, bottled straight from the cask. No colouring goes in and the spirit is never chill filtered. Billy Walker selected and blended this parcel himself. Just 4,500 cases went out worldwide, which makes it a small core-range release. Every bottle in the range carries an age statement. Walker bought the distillery from Pernod Ricard in October 2017, with Trisha Savage and Graham Stevenson. His first move was to slow everything down. Production capacity dropped from four million litres of alcohol to 500,000. Fermentation now runs for 160 hours, which the distillery credits for its ester-rich, fruity spirit. Sixteen warehouses on site hold more than 50,000 casks. The 2021 cask budget alone came to £1 million. Fresh fruit dominates the aroma: raspberry, guava and ripe plum. Milk chocolate and walnut sit underneath, with nutmeg and orange peel behind them. Vanilla and fudge take over on the palate, then coffee and dried fruit. Raisins and sultanas give the mid-palate its weight. Orange zest cuts through the sweetness and keeps things lively. The finish is long, with oak spice, caramel and one last flash of orange. Batch 5 leans hard on wine casks. Pedro Ximénez and Oloroso sherry puncheons do most of the work here. Rioja barriques sit alongside them, plus a small quantity of virgin oak. That mix of Spanish sherry and Spanish red wine wood shapes Glenallachie 10 years Cask Strength Batch 5. Batch 4, released just before it, won World's Best Single Malt at the 2021 World Whiskies Awards. Walker builds each batch from a fresh selection of casks.
