Founded in 1779, Bowmore is the oldest distillery on Islay and Scotland's second oldest. This 15-year-old single malt spends its first dozen years in bourbon barrels. Then it rests three more years in oloroso sherry casks. That long finish gives it a deep mahogany colour and a generous, layered character. You get warm caramel and vanilla first. Dark chocolate and dried fruit follow, wrapped in gentle peat smoke. A coastal note of seaweed and a faint medicinal edge keep it lively.
