The An Cnoc Distillery, formerly known as Knockdhu, is a small, picturesque distillery located in the village of Knock, in the Scottish Highlands. Founded in 1894, it has been producing whisky for over a century, with a focus on traditional methods and quality ingredients. The whisky produced at An Cnoc is known for its light and fruity flavors, with hints of honey, vanilla, and citrus. It is made using locally sourced barley and pure spring water from the Knock Hill, which gives it a distinct Highland character. An Cnoc distillery has a unique numbering system for its whisky releases. Instead of using traditional age statements, each bottling is numbered based on the age of the youngest whisky used in the blend. For example, An Cnoc 12 is a blend of whiskies that are at least 12 years old. The distillery has a special edition whisky named after its mascot, the black and white Highland cow. Called "The Cutter," this whisky is bottled at a higher strength than the standard An Cnoc releases and is aged in American oak ex-bourbon casks, giving it a bold and spicy flavour.
